WAKAME-ENRICHED POTATO WEDGE

Ingredients

½ kg Galician potato
1 small onion
10 g dehydrated Wakame
6 eggs
Salt
Olive oil

Prepared by

Hydrate the wakame in half a liter of water for 5 minutes; drain and set aside.
2. Wash, peel and thinly slice the potatoes and onion. Fry the potatoes and onion, thinly sliced, in plenty of olive oil.
3. Halfway through frying, add the drained wakame and finish frying.
4. Drain everything, salt to taste and mix with the beaten eggs.
5. Cook the mixture in the frying pan with a drizzle of oil.
6. Serve.
