HABITAT IN GALICIA
Very characteristic and exclusive in the coast, slightly open to the waves. The star shaped moss cover the rocks and are very close to the Irish moss.
IN THE KITCHEN
Traditionally very used as a gelling agent and stabilizer
It complements well with vinegars
Boiled in salads, scrambled eggs, soups, creams and stews
Battered and fried
It can be caramelized to make jellies, sauces, jams and desserts.
Can be boiled to add jelly texture to pickled sauce
