PROPERTIES

High soluble fiber content. It is rich, like other seaweed species, in iodine. Fat-free and sugar-free.

HABITAT IN GALICIA

Very characteristic and almost exclusive of the coastal landscape of localities slightly open to the swell. Tufts of starry moss form extensive “carpets” covering the rocks in close proximity to the Irish moss.

IN THE KITCHEN

Traditionally widely used as a gelling agent and stabilizer.

It complements well with vinegars

Boiled in salads, scrambled eggs, soups, creams, stews and casseroles.

Battered and fried

It can be caramelized to make jellies, sauces, jams and desserts.

It can be boiled to give a gelatinous texture to marinades.
