STEWED LENTILS WITH KOMBU

Ingredients

250 g Lentils
1 Garlic clove
2 Small carrots
120 g Onion
190 g Cured pork belly
1 Chorizo
10 g dried Kombu
2 Ripe tomatoes
100 g crushed tomato
75 g olive oil
1 Bay leave
1 teaspoon of sweet paprika
1 litre of chicken broth

Preparation

1. Wash the lentils and drain.
2. Peel and wash the carrots, tomatoes, onion and garlic. Chop it fine
3. In a saucepan, brown the garlic in the oil, add the chopped onion, diced carrot, dried kombu, chopped tomato, crushed tomato and paprika. Fry lightly 3 -4 minutes.
4. Add the lentils, the chorizo, the cured pork belly and the chicken stock and cook for 40 minutes.
5. Serve.
