PUMPKIN AND CODIUM CREAM

Ingredients

700 g of peanut squash
1 onion
4 cloves of garlic
2 medium potatoes
70 g of extra virgin olive oil
1.5 liters of vegetable stock or chicken stock
10 g of dehydrated Codium
Black pepper
Salt

Prepared by

1. Chop the codium into small pieces (about 1 mm): it is advisable to use a food processor.
2. Peel and wash the vegetables and cut them into slices.
3. In a saucepan, fry the garlic and the onion with the extra virgin olive oil until tender.
Add the potato and pumpkin and sauté for 10 minutes.
5. Add the boiling broth and cook for another 15 minutes.
6. Mash the whole mixture. Season to taste with salt and pepper.

Presentation

Serve with pepper and adding the codium flakes on top of the cream.
