SARDINES WITH SEAWEED

Ingredients

4 large sardines
40 g extra virgin olive oil
2 spring onions
4 small potatoes with skin
8 g dehydrated wakame
2 g dehydrated sea lettuce

Prepared by

Hydrate the wakame for 15 minutes in 300 g of cold water.
2. Chop the lettuce with the help of a food processor until flakes are obtained. Reserve.
3. Cut the potatoes in their skins into 1 cm thick slices. Steam for 12-15 minutes.
4. Clean the sardines and remove the loins.
5. Cut the spring onions into julienne strips.
6. Poach the spring onions in the oil for 4 minutes. Add the drained wakame and cook 3 minutes more.
7. Place a piece of baking paper over a hot frying pan and grill the sardine loins on top for 1 minute on each side.
8. To plate.

Presentation

Place the sliced potatoes, the spring onion with wakame and the roasted loins on top. Sprinkle with the lettuce flakes.
