BROCCOLI AND ALMOND SOUP

Ingredients

400 g broccoli
20 g almond powder
1 garlic clove
½ onion
½ zucchini
25 ml white wine
15 g bread
Salt, pepper and oil
4 g dehydrated sea moss

Prepared by

1. Hydrate the sea moss in 500 ml of water for 25 minutes and drain very well.
2. Fry the garlic, onion and zucchini in the pot, after having peeled and finely chopped them. Add the wine and let it cook for another minute.
3. Add the broccoli to the pot.
4. Add enough water to cover all the ingredients and once it starts to boil let it cook for about five minutes.
5. Remove from the heat and add the crumbled bread, the almonds, the sea moss and a pinch of salt and pepper.
6. Whisk everything until it becomes a fine cream.

Presentation

Place the cream in a bowl and garnish with a few drops of olive oil.
