Agar-agar is a natural polysaccharide extracted from various types of red seaweed (Rhodophyceae), mainly Gelidium and Gracilaria. It is a food additive (E-406) used as gelling, thickener and stabilizer in food applications.

For food use as a gelling agent, thickener and stabilizer. Gelling and stabilizing in jams, jellies, juices, compotes, pies, caramel custard, yogurt, curd, etc. Thickener, in low concentration, in custard, ice creams, mayonnaise and other sauces.
Prior preparation is required in three steps: Disperse into warm water and boil until complete dissolution under vigorous agitation. Gelling occurs upon cooling down and keeping texture at room temperature.
