WATERMELON, TOFU AND SEA LETTUCE SKEWERS
Ingredients
½ small watermelon /per skewer 22 g
200 g Tofu /per skewer 22 g
35 g Virgin olive oil
A pinch of white pepper
6 pickled peppers
3 g dried sea lettuce
6 wooden skewers 15 cm long
Prepared by
1. Chop the dehydrated lettuce into small flakes (we can use a food processor).
2. Peel the watermelon and cut into cubes of approx. 2×2 cm. We need 24 units.
3. Cut the tofu in dices of 2×2 cm approx. We need 24 units.
4. In a bowl mix the oil, the chopped lettuce and the white pepper. Place the tofu cubes inside and leave to marinate for 15 minutes.
5. Drain the peppers and cut off the stalk and cut each one in half.
6. Drain the tofu reserving the marinade.
7. On each skewer thread a dice of watermelon, a dice of tofu, half a piparra, a dice of watermelon, a dice of tofu and half a piparra.
8. Repeat the same operation with the remaining 11 skewers.
9. Serve with a little of the marinade on top.
