STIR FRIED RED CABBAGE AND AGAR AGAR
1 Red cabbage
10 g agar agar strips
2 Garlic cloves
5 g coarse salt
50 g extra virgin olive oil
1. Soak the agar agar in abundant water for 20 min. Drain
2. Remove the outer leaves of the red cabbage and cut into thin strips. Massage the red cabbage with the salt and let it rest for 30 minutes and drain.
3. Cut the garlic into slices.
4. Heat the oil in a frying pan with the garlic: as soon as it starts to brown, add the drained red cabbage and the agar-agar.
5. Stir fry for 3-4 min.
6. Ready to serve.
This is a good garnish for fish plates.
