Ingredients

1 red cabbage
10 g agar-agar in strips
2 cloves of garlic
5 g coarse salt
50 g extra virgin olive oil

Prepared by

1. To hydrate the agar-agar in half a liter of water during 20 minutes. After this time, drain.
Remove the outer leaves of the red cabbage and cut into thin strips. Massage the red cabbage with the salt and let it rest for 30 minutes and drain.
3. Slice the garlic.
4. Heat the oil in a frying pan with the garlic: as soon as it starts to brown, add the drained red cabbage and add the agar-agar.
5. Sauté for 3-4 minutes.
6. Ready to serve.

Presentation

It is a good garnish for fish.
