Salmon and wakame tartar

Ingredients

5 g dehydrated organic wakame from Portomuiños
100 g salmon
1/2 avocado
1/2 teaspoon grated ginger
Sesame seeds
Crispy nori leaves
For the dressing:
1/2 teaspoon rice vinegar
1 tablespoon soy sauce
1 teaspoon toasted sesame oil

Prepared by

Rehydrate the wakame for 10 minutes and set aside.
2. Cut half an avocado and the salmon into cubes and set aside.
3. For the dressing, mix the rice vinegar, soy sauce and toasted sesame oil.
4. Chop the rehydrated wakame into thin strips, mix with the dressing and set aside.
5. Add the ginger zest to the avocado and salmon and mix.
6. Add the wakame with the dressing and stir gently.

Presentation

1. Serve and sprinkle sesame seeds.
2. We can accompany with a few sheets of crunchy nori.
