MILLET, CARROT AND CODIUM SOUP

Ingredients

6 g dehydrated codium
1 large carrot
80 g millet
1 garlic clove
1 spring onion
70 g extra virgin olive oil
1 l water or vegetable stock

Prepared by

Chop the codium into small pieces (about 1 mm): it is advisable to use a food processor.
2. Wash and drain the millet.
3. Dice the spring onion (keep the branch), the garlic and the carrot.
4. In a pot, brown the garlic with the oil, add the onion and poach for 5 minutes.
5. Add the carrot, the spring onion branch, the millet and the codium. Cover with water or vegetable stock and cook for 20-25 minutes.

Presentation

This preparation can also be made with wakame.
