GOAT ROLLER CHEESE, ALGAE AND WALNUT SALAD

Ingredients

2 slices of goat roller cheese

For the seaweed and walnut dressing
4 peeled walnuts
1 teaspoon of honey
Juice of ½ lemon
60 g of extra virgin olive oil
2 tablespoons of water
1 pinch of black pepper
3 g of seaweed salad

To plate
50 g of clean mixed lettuces
4 fresh basil leaves

Preparation

For the dressing:
1. Chop the walnuts.
2. Add the dried seaweed salad, water, honey, oil, lemon juice and black pepper.
3. Stir and reserve.

For the goat roller cheese
1. Heat a frying pan without oil.
2. Add the cheese slices and grill for 2 minutes on each side.
3. Add the dressing and serve.

Presentation

Place the cheese slices with the dressing in the centre of 2 plates. Lay the salad around.
