GALICIAN-STYLE OCTOPUS WITH POTATOES AND SEA LETTUCE PUREE

Ingredients

2 legs of cooked octopus
300 g of potatoes
10 g dried sea lettuce
20 g of whole milk
2 g of butter
Peppers
Salt to taste
Olive oil

Preparation

1. Peel the potatoes. Cut into pieces and cook them in water with salt for 15 minutes approx.
2. Put the cooked potatoes, whole milk and butter in a blender and mash.
3. Add the sea lettuce and mash everything again. Add a little of the cooking water if necessary, taste and salt.
4. Place a piece of greaseproof paper and a few drops of oil in a frying pan. When it is hot, grill the cooked octopus legs, approximately 1-2 minutes on each side.

Presentation

Place the sea lettuce mashed potatoes at the base of the plate and the octopus leg on top. You can sprinkle a little paprika on top.
