CONFIT PORK RIBS WITH KOMBU

Ingredients

1200 g pork ribs
15 g dehydrated Kombu
4 cloves of garlic
2 sprigs of parsley
1 sprig of thyme
5 g salt
1 g pepper
450 g virgin olive oil
450 g chicken broth

Prepared by

1. Hydrate the kombu in half a liter of water with salt for 20 minutes and drain.
2. In a chopper, grind the kombu, garlic, parsley, thyme, salt, pepper, and 50 g of olive oil. Once a paste is obtained, spread it all over the meat as a marinade and leave it refrigerated for one day wrapped in plastic wrap.
3. Place the rest of the oil and chicken broth in a pot. Submerge the rib with the marinade and cook over very low heat for about 2.5 hours – 3 hours, or until we can separate the bone from the meat.
4. Debone the ribs and finish in a very hot oven (200ºC) or on a griddle until the rib is golden brown and crispy.

Presentation

Serve with mashed potatoes and
piquillo peppers.
