CONFIT RIBS WITH KOMBU
1200 g of pork ribs
15 g dried Kombu
4 Garlic cloves
2 Parsley branches
1 Thyme branch
5 g Salt
1 g pepper
450 g extra virgin olive oil
450 g Chicken broth
1. Soak the kombu in abundant water for 20 min and stir.
2. In a grinder, crush the kombu, garlic, parsley, thyme, salt, pepper and 50 g of olive oil. Once a paste is obtained, we spread all the meat, as a marinade and refrigerate one day wrapped in food film.
3. Place the rest of the oil and the chicken broth in a pot. Immerse the rib with the marinade and cook over very low heat for about 2.5 hours – 3 hours, or until we see that the meat is separating from the bone.
4. Bone the ribs and finish in the oven very hot (200ºC) or on a griddle until the rib is well browned and crisp.
Serve accompanied by a mashed potato and piquillo peppers.
